The only meat yummier than a perfectly grilled steak is a marinated steak topped with a wonderfully balanced salsa. This mango salsa will set you tastebuds dancing, playing perfect counterpoint to simple couscous and fresh peas.
Ingredients
Marinated Steak:
- ¼ cup lime juice
- 2 Tbsp. minced green onion
- 2 Tbsp. water
- 1 Tbsp. vegetable oil
- 2 tsp. minced fresh ginger
- 2 cloves garlic, minced
- ⅛ tsp. salt
- 1 lb. top round beef steak
Mango Salsa:
- 1 mango, diced
- 2 Tbsp. minced green onion
- 1 Tbsp. lime juice
- 1 Tbsp. fresh cilantro
- 1 red jalapeno pepper, chopped
Couscous:
- 4 cups cooked couscous
- 2 cups sugar snap peas, steamed
Directions
- Whisk together marinade ingredients and place in a sealable plastic bag with steak. Marinate in the fridge for at least 6 and up to 12 hours.
- Just before grilling, combine salsa ingredients. Cover and refrigerate until ready to serve.
- Remove steak from marinade and discard marinade. Preheat grill to medium-high and cook steak for 4 minutes. Flip and cook until desired doneness is reached.
- Slice steak and serve with salsa, couscous, and sugar snap peas.
