Chicken and mango, mango and chicken—is there a better combination for the grill in the summertime? Serve this dish up with a side of brown rice and some beautifully kebabed summer veggies for a colorful, flavorful al fresco meal.
Ingredients
- 4 (4 oz.) boneless, skinless chicken breast cutlets
- 2 Tbsp. mango chutney or salsa
- 2 Tbsp. fresh lime juice
- ½ tsp. ginger
- 1 Tbsp. olive oil
- ¼ cup orange juice
- 1 tsp. minced fresh oregano
- ½ tsp. hot pepper sauce
- 2 garlic cloves, minced
Directions
- Place chicken in a sealable storage bag.
- Whisk together remaining ingredients and pour over chicken. Marinate in fridge, turning once or twice (1-8 hours).
- Preheat grill to medium-high. Place chicken on grill, discarding excess marinade. Grill chicken until it reaches a minimum internal temperature of 165ºF (4-6 minutes per side).
