Grilled Brazilian Beef with Chimichurri

Grill up something bold with this peppered steak and flavorful sauce. Fresh, bright flavor from greens and garlic cannot be beat as a topping for perfectly grilled beef.

Ingredients

  • Chimichurri Sauce:

    • 1 clove garlic
    • ¼ cup parsley
    • ¼ cup cilantro
    • 2 Tbsp. olive oil
    • 1 Tbsp. sherry wine vinegar
    • ¼ tsp. salt
    • ⅛ tsp. crushed red pepper

    Steak:

    • ½ tsp. black pepper
    • ¼ tsp. ground red pepper
    • 2 (8 oz.) boneless beef top loin strip steaks, cut ¾" thick

Directions

  1. Place all sauce ingredients in food processor and process until finely chopped.
  2. Heat grill to medium. Press red and black peppers evenly onto steaks. Grill to a minimum internal temperature of 145ºF, turning once (8-10 minutes per side).
  3. Carve steak into slices. Serve with sauce.
