This easy recipe makes a fantastic summertime side dish. Use whatever seeds is most convenient–pepitas would also work well.
Tip: If you’re not a fan of raw onion, make this a skillet dish and start by frying the onions until soft.
Ingredients
- 1 lb. green beans, trimmed
 - ¼ cup chopped onion
 - 2 garlic cloves, minced
 - ½ tsp. salt
 - Pepper, to taste
 - Red pepper flakes, to taste
 - 2 Tbsp. sunflower seeds
 - 1 tsp. chopped fresh oregano
 
Directions
- Place the beans in a saucepan. Cover with water and bring to a boil; reduce the heat to a simmer, and cook until tender (7-8 minutes).
 - Drain beans. Toss remaining ingredients to serve.
