Greek Village Salad

A quick, easy and delicious salad that will match your favorite entrees. If you grow your own herbs, swap the dried oregano out with a handful of whatever you have fresh on hand for even better flavor. Tarragon, marjoram, or thyme would all work beautifully.

Ingredients

  • 5 tomatoes, sliced
  • 1 cucumber, diced
  • 3 scallions, sliced
  • 16 Greek olives, rinsed
  • 2 oz. feta cheese, crumbled
  • 1 clove garlic, thinly sliced
  • 1 Tbsp. olive oil
  • 2 Tbsp. vinegar
  • ¼ tsp. pepper
  • ¼ tsp. oregano

Directions

  1. Toss all ingredients together. Serve immediately.
