Ingredients
- 1 1/2 cups wheat berries, cooked according to package
- 1/4 cup rice vinegar
- 1/3 cup fresh orange juice
- 1 tablespoons honey
- 1/2 cup golden raisins
- 1/2 cup dried figs, chopped finely
- 1/2 medium red onion, minced
- 3 large stalks celery, diced
- 1/4 cup olive oil
- 1 tablespoon lemon zest
- 1 cup toasted almonds
- 1/4 cup mint
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
Directions
- Whisk together in a saucepan: vinegar, juice and honey. Bring to a boil and add the dried fruit. Let steep for 5-10 minutes.
- Mix onion, celery and wheat berries. Toss with the olive oil and lemon zest. Add the vinegar and juice mixture, and all the fruit, and mix. Toss with the almonds, mint, salt and pepper.
- Let stand at room temperature for at least one hour before serving. Serve warm or at room temperature.
