Easy Chili

An easy recipe for a beginner chef, this would make a great meal to prep with the kids. It’s delicious enough that your guests will think you and your kids are pros!

Tip: You can use frozen, canned, or fresh corn. Any will be fantastic. If you’re using canned, look for the low-sodium options.

Ingredients

  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 green pepper, diced
  • 1½ cups corn
  • 2 (15 oz.) cans kidney beans, rinsed and drained
  • 1 (28 oz.) can crushed tomatoes
  • 2 Tbsp. tomato paste
  • 1 Tbsp. chili powder (or to taste)

Directions

  1. Combine onion, garlic and green pepper in a skillet over medium heat. Cook, stirring, until softened (5-10 minutes).
  2. Add remaining ingredients. Allow the chili to come to a boil, then reduce heat and simmer on low until thickened.
