Nutritious breakfast cookie recipes can be hit or miss on the flavor front. This one is simple and tastes mildly of bran. It’s a very flexible base to work with. Add in chopped apples or ripe pears for little bites of flavor. Make it more of a meal by adding a few tablespoons of chopped nuts. For a special treat, add a few tablespoons of dark chocolate chips.
Ingredients
- 2½ ripe bananas
- ½ cup chopped dates
- ½ cup flax seeds
- ½ cup oat bran
- 1½ cups whole wheat flour
- 1 cup soy milk
- 1 tsp. baking soda
- ½ Tbsp. salt
Directions
- Preheat oven to 350°F.
- Mash bananas together with flax seed in mixing bowl. Stir in all other ingredients and mold the mixture into 8 cookies. Place on a nonstick baking sheet. Bake until firm to the touch (30-35 minutes).
