Curried Turkey-Avocado Sandwich

Avocado, cranberries, and curry powder combine to make this turkey salad colorful and peppy. You can also serve it on greens instead of using it in sandwiches.

Ingredients

  • ¼ cup light mayonnaise
  • 2 tsp. curry powder
  • 2 cups cooked, cubed turkey
  • 1 avocado, peeled and cubed
  • ¼ cup dried cranberries
  • 2 Tbsp. chopped fresh cilantro
  • Pepper, to taste
  • 8 slices light, whole-grain bread
  • 2 cups salad greens mix

Directions

  1. Mix mayonnaise and curry powder in a large bowl until well blended. Stir in turkey, avocado, cranberries, and cilantro.
  2. Divide turkey salad evenly among 4 slices of bread.
  3. Sprinkle with pepper and top each with greens and remaining bread.
