This is a festive looking, mayonnaise-free slaw that you can make ahead of time. The dressing is sweetened with a little maple syrup and balsamic vinegar and gets some zip from dijon mustard and lemon zest.
Ingredients
- 2 Tbsp. balsamic vinegar
- 1 tsp. Dijon mustard
- 1 tsp. maple syrup
- 1 clove garlic, minced
- ½ tsp. lemon zest
- Pepper to taste
- ½ cup canola oil
- 1 (16 oz.) pkg. broccoli coleslaw mix
- ½ cup dried cranberries
- ¼ cup chopped green onions
- ¼ cup chopped pecans
Directions
- In a medium bowl, whisk together the vinegar, mustard, maple syrup, garlic, lemon zest, and pepper. Gradually whisk in the canola oil while drizzling in a fine stream.
- In a serving bowl, combine the broccoli slaw, dried cranberries, and onion. Pour the dressing over, and toss to coat evenly. Chill for at least 15 minutes before serving. Sprinkle pecans over the top just before serving.
