Cold Hummus Pizza

Hummus is an awesome appetizer, but it’s easy for guests to end up trapped by the snacks table or having to juggle a place full of dips and different veggies. Turning the classic snack into a single dish that can be eaten with one hand makes this dish a convenient offering.

Ingredients

  • Pizza:

    • 1 recipe Whole-Wheat Pizza Dough
    • 1½ cups hummus
    • 1 cup chopped mixed bell peppers
    • 1 cup diced cucumbers
    • 1 cup sliced mushrooms
    • ½ cup diced red onions
    • 3 cups chopped spinach

    Sauce:

    • ⅓ cup olive oil
    • ½ cup fresh parsley
    • ½ cup fresh basil
    • 1 clove garlic, chopped
    • 1" piece jalapeño, deseeded and chopped
    • ¼ tsp. salt

Directions

  1. Preheat oven to 400ºF.
  2. Roll pizza dough into a 16″ circle and bake on a pizza stone or baking sheet until golden (10-12 minutes).
  3. Spread hummus on top of the pizza crust and top with veggies.
  4. In a blender or food processor, puree the sauce ingredients. Drizzle over the pizza and serve.
