This meatloaf tastes just like your mother used to make it, but with lean meat and oats to bind the mixture and keep it moist, this version is a whole lot healthier. If you like more veggies in your meatloaf, feel free to add more of your favorites to the mix.
Ingredients
- 7 Tbsp. ketchup, divided
- 1 Tbsp. Worcestershire sauce
- 1 cup quick-cooking oats
- ½ cup minced onion
- 2 Tbsp. parsley
- 1 Tbsp. basil
- ¼ tsp. salt
- ½ tsp. pepper
- 1 lb. 90% lean ground beef
- 2 large eggs
- 2 cloves garlic, minced
- 1 bell pepper, chopped
Directions
- Preheat oven to 375ºF. Coat a 9″x5″ loaf pan with cooking spray.
- Combine 4 tablespoons of ketchup and all other ingredients in a large bowl. Stir until well blended.
- Pat mixture into loaf pan and top with remaining 3 tablespoons ketchup. Bake to a minimum internal temperature of 160ºF (1 hour).
- Remove from oven and let stand to finish cooking (10 minutes). Serve in slices.
