Cabbage soup is inexpensive and hearty. For a more flavorful soup, add more garlic or onions to suit your tastes. Experiment with adding a few fresh herbs or carrots as well—whatever you have in your fridge.
Ingredients
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/2 pound potatoes, skin on, cubed
- 4 cloves garlic, minced
- 1/2 large onion, thinly sliced
- 5 cups low-sodium vegetable stock
- 1 1/2 cups white beans, cooked
- 1/2 medium cabbage, cored and finely shredded
Directions
- Warm the olive oil in a large thick-bottomed pot. Add the salt and potatoes. Cover and cook until tender and browning.
- Stir in the garlic and onion and cook until soft.
- Add the stock and the beans and bring the pot to a simmer. Stir in the cabbage and cook until the cabbage is almost soft. Serve warm.
