Ingredients
- Marinated Tofu:
- ¼ cup chopped fresh cilantro
- ⅔ cup lime juice
- ¼ cup minced garlic
- 3 tsp. cumin
- ½ tsp. smoked paprika
- ⅛ tsp. salt
- ¼ tsp. pepper
- 1 lb. extra-firm tofu, sliced into ½" pieces
- Sauce:
- ¼ cup chopped fresh cilantro
- 2 Tbsp. olive oil
- 1 Tbsp. honey
- Onions & Peppers:
- 2 Tbsp. olive oil
- 1 red onion, sliced
- 3 bell peppers, sliced
- ½ tsp. cumin
- ¼ tsp. smoked paprika

Instructions
- Toss together marinade ingredients. Combine tofu with half of the marinade in a sealable container and refrigerate (1-24 hours). Reserve remaining marinade for sauce.
- Preheat oven to 450°F. Line a large baking sheet with aluminum foil.
- Pour the remaining half of the marinade into a blender, along with sauce ingredients. Blend until smooth.
- In a large bowl, toss the onion and peppers with olive oil, cumin, and paprika. Drain the marinated tofu.
- Place onion and pepper mix on one half of the prepared baking sheet and the drained tofu on the other.
- Bake until vegetables are tender and the tofu is lightly browned, stirring the vegetables and flipping the tofu halfway through (20-25 minutes).
- Divide tofu and vegetables onto plates and drizzle with sauce to serve.
