Frosting is an easy menu item to remove to cut back on the sugar impact from dessert, but let’s face it: sometimes you just want frosting. On a cupcake or on a spoon, it’s a pleasure. This nutritious variation on chocolate frosting can be tweaked with spices like cinnamon or nutmeg to fit whatever you’re frosting.
Ingredients
- ¾ cup dates, pitted
- ¼ cup hot water
- 2 ripe avocados
- ¼ cup cocoa powder
- ¼ tsp. vanilla
- ⅛ tsp. salt
- Unsweetened almond milk (optional)
Directions
- Combine dates and hot water. Let sit for 5 minutes, then puree in a food processor to achieve a paste.
- Pit avocados and remove flesh from skin. Place in food processor with date paste.
- Add cocoa, vanilla and salt to food processor and puree. If the frosting is too thick, it can be thinned with a drizzle of unsweetened almond milk.
