Ingredients
- 12 oz. whole-grain rotini
- 2 Tbsp. olive oil
- 2 cups onion, chopped
- 2 Tbsp. garlic, minced
- 1 lb. mushrooms, chopped
- 2 cups bell pepper, chopped
- 20 oz. lean ground turkey
- 4 tsp. cumin
- 2 tsp. oregano
- 1 tsp. salt
- 1 tsp. paprika
- 1 tsp. chili powder
- 1 tsp. pepper
- ¼ tsp. ground red pepper
- 4 cups Guiding Stars-worthy marinara sauce
- 2 cups no-salt-added kidney beans, rinsed and drained
- 4 oz. extra-sharp cheddar cheese, shredded
Directions
- Preheat oven to 350°F.
- Cook pasta according to package directions.
- While pasta is cooking, heat oil in a large skillet over medium heat. Add onion, garlic, mushrooms, and bell pepper. Cook until almost soft (8-10 minutes).
- Add turkey and stir, breaking up, until fully cooked (5-6 minutes).
- Add spices and marinara sauce and bring to a boil. Stir in pasta and beans.
- Coat a large baking dish with non-stick cooking spray, spread mixture in pan and top with cheese. Bake until cheese is melted and lightly toasted (10-15 minutes).
