Chicken Sausage with Lentils

Lentils and chicken sausage team up to provide a lean and delicious meal that comes together with minimum hassle while you’re handling other little end-of-day tasks.

Ingredients

  • 6 shallots, thinly sliced
  • 1 Tbsp. olive oil
  • 14 oz. fat-free chicken sausages
  • ¼ tsp. pepper
  • ½ cup dry white wine
  • 2 (14.5 oz) cans low-sodium lentils, drained and rinsed
  • ¼ cup water
  • ¼ tsp. herbes de Provence

Directions

  1. Preheat oven to 450ºF.
  2. Heat the oil in a large, oven-safe skillet over medium heat. Stir in shallots and sausages, transfer to oven, and bake until the shallots are soft and caramelized and the sausages blistered, stirring occasionally (30 minutes).
  3. Remove skillet from the oven and place over high heat. Add the wine and bring to a boil. Scrape brown bits off the bottom of the pan, then add lentils, water, and herbes de Provence. Simmer until the liquid is mostly evaporated (2-3 minutes). Serve hot.
