A traditional, easy meal that’s hearty and filling, this easy skillet is a perfect meal to include in a meal prep plan to used up leftover rice and chicken from a previous dinner.
Tip: If you don’t have leftover brown rice on hand, sub in instant brown rice for a speedy cook time.
Ingredients
- 1 tsp. vegetable oil
- 1 cup chopped onion
- 1 clove garlic, minced
- 1 cup diced, cooked chicken breast
- 1 (15 oz.) can pinto beans, drained
- 2 cups cooked brown rice
- 1 tsp. rosemary
- ½ tsp. thyme
- ⅛ tsp. cayenne pepper
- 1 cup reduced-sodium chicken broth
Directions
- Heat oil in large nonstick skillet over medium heat.
- Add onion and garlic and sauté until soft (4-5 minutes).
- Add remaining ingredients, cover, and cook on low heat until liquid is evaporated (5 minutes). Serve hot.
