Fried rice is a delightful dish, and it’s easier to make at home than you might realize. The trick to success is to start with cold rice, making this a perfect dish for repurposing rice leftover from last night’s meal.
Ingredients
- 1 tsp. vegetable oil
- 1 cup sliced green onion
- 2 cups sliced mushrooms
- 2 large eggs
- 2 cooked chicken breasts, diced
- 2 Tbsp. light soy sauce
- 1 Tbsp. sesame oil
- Garlic powder to taste
- Red pepper flakes to taste
- 4 cups cooked brown rice
Directions
- Heat oil in nonstick skillet over medium-high heat until hot. Sauté green onions and mushrooms until mushrooms are soft (4-5 minutes).
- Add the eggs and scramble (2-3 minutes).
- Add remaining ingredients and just enough water to prevent sticking. Stir until heated through and slightly crispy (5-8 minutes).
