Ingredients
- 2 tablespoons olive oil
- 1 medium onion, thinly sliced
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon garlic, minced
- 5 cups chard leaves, chopped
- 1 (15 ounce) can no salt added chickpeas, drained and rinsed
- 1 1/2 pounds boneless, skinless chicken breast, cubed
- 4 cups low sodium chicken broth
- 2 tablespoons fresh lemon juice
Directions
- Heat oil over medium heat. Add the onions cook until soft. Add the garlic and cook until fragrant.
- Add the chard, chickpeas, chicken and broth. Bring to a boil.
- Reduce to a simmer and cover. Cook until the chicken is cooked through, 12 to 15 minutes.
- Add lemon juice and season with salt and pepper.
