Chicken Cacciatore

This classic Italian dish is full of vegetable goodness, especially when you choose a sauce that is low in sugar and salt. Serve your portions up with either whole-grain pasta or bread for a meal that is complete, delicious and easy to make.

Ingredients

  • 4 skinless chicken breasts
  • 2 Tbsp. olive oil
  • ½ lb. mushrooms, halved
  • 1 bell pepper, sliced
  • 1 onion, chopped
  • 1 (26 oz.) jar Guiding Stars-worthy pasta sauce

Directions

  1. Preheat oven to 350ºF. Place chicken in baking pan.
  2. Heat oil in a large skillet over medium-high heat. Sauté the vegetables until soft and brown (7-8 minutes).
  3. Arrange vegetables around chicken and cover with sauce. Bake until chicken reaches a minimum internal temperature of 165ºF (25-30 minutes).
