Chicken And Mushrooms In Wine Sauce

Ingredients

  • 3 tablespoons olive oil
  • 2 cup sliced mushrooms
  • 2 tablespoon garlic, minced
  • 4 - 6 ounce boneless skinless chicken breast halves
  • Salt and pepper
  • 2 tablespoon flour
  • 1/4 cup plus 2 tablespoons dry white wine
  • 1 - 2 tablespoon lemon juice
  • 1 tablespoon minced fresh parsley

Directions

  1. Heat oil in heavy medium skillet over medium heat.
  2. Add mushrooms and garlic and sauté until mushrooms begin to brown, about 5 minutes. Transfer mushrooms to plate; keep warm.
  3. Season chicken with salt and pepper. Dust seasoned chicken in flour. Add chicken to skillet and cook until brown on both sides, turning once, about 6 minutes.
  4. Add wine and lemon juice to skillet and continue cooking until liquid is reduced to 2 tablespoons, about 2 minutes.
  5. Place chicken on top of mushrooms. Sprinkle with parsley and serve.
