Pasta and frozen broccoli are excellent pantry items to have on hand because they don’t need much help to turn into tasty sides like this. To make a meal of this, stir in a can of beans or leftover chopped chicken or pork from a previous dinner.
Ingredients
- ½ lb. penne pasta
- 5 cups broccoli florets
- ¼ cup olive oil
- 10 garlic cloves, sliced
- ½ cup reduced-sodium chicken broth
- Zest of 1 lemon
- Pepper to taste
- ¼ cup grated Parmesan cheese
Directions
- Cook penne according to package directions. Two to three minutes before penne is ready, add broccoli to penne. Finish cooking and drain.
- While pasta cooks, heat oil in a large skillet over medium-high heat. Sauté the garlic until aromatic (1-2 minutes).
- Add broth and boil until reduced by half (3-5 minutes). Stir in pasta, broccoli, and lemon zest and cook until coated with sauce (2-3 minutes). Season with pepper and serve warm, topped with cheese.
