Ingredients
- 1 Tbsp. olive oil
- ¼ cup chopped onion
- ¼ cup chopped bell pepper
- ½ cup frozen hash brown potatoes
- 3 large eggs, beaten
Directions
- Heat oil in a large skillet over medium heat. Sauté onion and pepper until tender (6-8 minutes).
- Add hash browns and cook until potatoes are soft and brown, stirring occasionally (4-5 minutes).
- Pour eggs over vegetables and continue to cook until the eggs are set, stirring often (4-5 minutes).
