Ingredients
- 1 lb. black beans
- 1 green pepper, chopped
- 1½ cups chopped onion
- 1 Tbsp. vegetable oil
- 2 bay leaves
- 1 garlic clove, minced
- ⅛ tsp. salt
- 1 Tbsp. lemon juice
- 3 cups rice
- 1 (4 oz.) can pimento slices, drained
- 1 lemon, cut into wedges

Instructions
- Soak beans overnight in cold water. Drain and rinse.
- In large, heavy-bottomed pot, stir together beans, green pepper, oil, onion, garlic, salt, and bay leaves. Cover with water, cover, and boil for 1 hour.
- Reduce heat and simmer, covered, until beans are very tender, stirring occasionally, and adding water if needed (3-4 hours).
- Remove and mash about ⅓ of beans. Return to pot. Stir and heat through. Remove bay leaves and stir in lemon juice.
- Cook rice according to package directions.
- Serve over warm rice, garnished with pimento and lemon wedges.
