Vegetarians rejoice! These are one of the best meatless burgers we’ve tried yet, and they’re only half an hour away.
Tip: Make this recipe with leftover, chilled quinoa for the firmest texture.
Ingredients
- 1 (15.5 oz.) can low-sodium black beans, drained and rinsed
- ½ cup cooked quinoa
- ½ tsp. cumin
- ½ tsp. pepper
- ½ tsp. paprika
- ¼ tsp. salt
- 1 Tbsp. nutritional yeast
- ½ tsp. dijon mustard
- 1 Tbsp. olive oil
- 4 whole-grain buns
Directions
- Preheat oven to 400ºF.
- Mash all ingredients except oil together. Divide the mixture into four equal balls, and form each into a patty.
- Heat oil in a medium, oven-proof skillet over high heat and cook the patties until lightly browned (1 minute per side).
- Transfer skillet to oven and bake until firm (15 minutes). Serve patties on buns, topped with fresh veggies as desired.
