Using a broiler to cook kebabs makes this dish possible even in the middle of winter when grilling is not everyone’s idea of a fun time. A simple pilaf makes the perfect pairing for a quick and easy dinner your family will love.
Ingredients
- 1¼ lbs. top sirloin steak, cubed
Marinade:
- 2 tsp. vegetable oil
- 2 tsp. Dijon mustard
- 2 tsp. red wine vinegar
- 1 clove garlic, minced
- ½ tsp. pepper
Broccoli Pilaf:
- 2 tsp. vegetable oil
- 1 small onion, chopped
- 1 clove garlic, minced
- ⅔ cup brown rice
- 1¼ cups beef broth
- 1 Tbsp. Dijon mustard
- 4 cups broccoli florets
Directions
- Whisk together marinade ingredients and toss with beef to coat.
- Thread beef onto skewers, leaving space between pieces. Place kebabs on rack in broiler pan with the oven rack in the highest position. Broil on high for medium-rare to medium doneness, turning occasionally (8-10 minutes).
- For pilaf, heat oil in saucepan over medium heat. Sauté onion and garlic until tender (3-5 minutes).
- Add rice and gently toast (1 minute). Stir in broth and mustard. Bring to boil; reduce heat to low. Cover and simmer 15 minutes. Place broccoli over the rice. Cover and continue cooking until broccoli and rice are tender (5-7 minutes).
- Serve pilaf hot topped with beef kebabs.
