Ingredients
- 2 strips turkey bacon, diced
- 1 small onion, diced
- 1 clove garlic, minced
- 1 lb. ground chicken
- 1 egg white
- 3 Tbsp. finely chopped fresh parsley
- 2 Tbsp. low-sodium tomato sauce, divided
- 1 Tbsp. olive oil

Instructions
- Preheat oven to 400ºF.
- In a skillet over medium heat, cook the bacon until some of the fat has rendered out (4-5 minutes).
- Add the onion and garlic and cook until the onion is translucent and the bacon is just crispy (5-8 minutes). Remove from the heat and cool slightly.
- Stir together the bacon mixture, ground chicken, egg white, parsley, and half of tomato sauce in a large bowl. Form into about 16 (1”) balls. Place balls in a large baking dish.
- Whisk together 1 tablespoon of olive oil and remaining half of tomato sauce together in a small bowl and brush on top of each meatball. Bake until meatballs reach a minimum internal temperature of 165ºF (15-20 minutes)
