This lunch is designed to be packed with flavor and quick to make. Ditch your routine sandwich for something with a little more pizzazz for a packed lunch that you can look forward to.
Ingredients
- 2 tsp. vegetable oil
- 1 lb. ground chicken breast
- 1 cup diced cucumber
- ⅓ cup sliced green onion
- ¼ cup lime juice
- ¼ cup chopped fresh cilantro
- 2 Tbsp. low-sodium soy sauce
- 2 tsp. sesame oil
- ⅛ tsp. crushed red pepper flakes (optional)
- Pinch black pepper
- 1 head of Romaine lettuce, leaves separated and washed
Directions
- Heat vegetable oil in a large sauté pan over medium-high heat. Add chicken to pan and sauté until meat is just cooked through but not browned (5-6 minutes).
- Remove chicken from pan and refrigerate until chilled (1 hour).
- In a medium bowl, combine the cold chicken and the remaining ingredients, except for lettuce. Toss to coat.
- Divide chicken between lettuce leaves to serve.
