Asian Lettuce Wraps

This lunch is designed to be packed with flavor and quick to make. Ditch your routine sandwich for something with a little more pizzazz for a packed lunch that you can look forward to.

Ingredients

  • 2 tsp. vegetable oil
  • 1 lb. ground chicken breast
  • 1 cup diced cucumber
  • ⅓ cup sliced green onion
  • ¼ cup lime juice
  • ¼ cup chopped fresh cilantro
  • 2 Tbsp. low-sodium soy sauce
  • 2 tsp. sesame oil
  • ⅛ tsp. crushed red pepper flakes (optional)
  • Pinch black pepper
  • 1 head of Romaine lettuce, leaves separated and washed

Directions

  1. Heat vegetable oil in a large sauté pan over medium-high heat. Add chicken to pan and sauté until meat is just cooked through but not browned (5-6 minutes).
  2. Remove chicken from pan and refrigerate until chilled (1 hour).
  3. In a medium bowl, combine the cold chicken and the remaining ingredients, except for lettuce. Toss to coat.
  4. Divide chicken between lettuce leaves to serve.
