Asian Green Bean Salad

This is a light and fresh salad that makes for a simple and healthful brown-bag lunch at work or school. Snow peas can be substituted for the beans. Garnish with a cilantro sprig.

Ingredients

  • Dressing:

    • ¼ cup rice wine vinegar
    • ¼ cup low-sodium soy sauce
    • 2 Tbsp. dark sesame oil
    • 2 Tbsp. grated ginger
    • ½ tsp. sugar
    • ¼ tsp. pepper
    • 3 cloves garlic, minced
    • 1 jalapeño, finely chopped

    Salad:

    • 3 oz. linguine
    • 1 lb. green beans, trimmed
    • 2 cups sliced celery
    • 1 cup thinly sliced bell pepper
    • ½ cup sliced green onions
    • ⅓ cup chopped fresh cilantro

Directions

  1. Whisk together dressing ingredients and set aside.
  2. Cook pasta according to package directions, adding beans during last 3 minutes of cooking. Drain and rinse immediately under cold water until cooled.
  3. Gently stir in remaining vegetables. Toss with dressing to serve.
