Arroz con pollo or chicken cooked with rice is a common dish in Latin America and a great way to use up leftover chicken or turkey.

Ingredients

  • 1 cup brown rice, dry
  • 2 cups water
  • ¾ cup roasted chicken breast, cubed
  • ½ cup green peas
  • ¼ cup diced bell pepper
  • ¼ cup chopped green onion
  • 1 tsp. ground cumin
  • 1 tsp. coriander
  • 1 tsp. granulated garlic
  • ¼ tsp. paprika

Directions

  1. Place all ingredients into a rice cooker and cook until done, about 30 minutes. Serve hot.
