2 Bean Potato Salad

Since it can be served warm or cold, this family favorite can be eaten any time of the year.

Ingredients

  • 2 medium baking potatoes, peeled and diced
  • 3 cups frozen French-cut green beans
  • 1-8 ounce can kidney beans, drained and rinsed
  • 1/4 cup sliced green onions
  • 1/4 cup sliced green pepper
  • 1/3 cup nonfat mayonnaise
  • 1/4 cup balsamic vinegar
  • 1 tablespoon prepared mustard

Directions

  1. Place potatoes into large saucepan and cover with water. Bring to a boil, reduce to a simmer and cook uncovered until tender- about 10-20 minutes. Turn heat off and add frozen green beans. Stir and allow to sit for one minute. Drain off excess water and place into a large mixing bowl.
  2. Add the rest of the ingredients to the large mixing bowl with the potatoes and mix well. Serve salad warm or chill until ready to serve.
