These muffins are perfect to make on a rainy afternoon. They come together quickly, and lightly sweetened with fruit, they’re a wholesome snack for afternoon tea or an after-school snack.
Ingredients
- 2 cups whole-wheat flour
- 2 cups oat bran
- 4 tsp. baking powder
- ¼ salt
- ½ cup raisins
- 2 cups mashed ripe bananas
- ½ cup unsweetened apple juice
Directions
- Preheat oven to 350ºF.
- Sift flour, oat bran, baking powder, and salt together. Stir in raisins.
- Stir in banana and apple juice until just mixed. Spoon the batter into 18 non-stick muffin cups and bake until springy and lightly browned (25-30 minutes).
