Asian Noodle Bowl

This is not pad thai, but if you and your family like pad thai, you might find the lightly sweet, peanuty sauce to be an easy way to approximate the more complicated dish. Vary the vegetables to use up odds and ends in your fridge or swap in your favorites.

Ingredients

  • 8 oz. spaghetti
  • 2 tsp. vegetable oil
  • 2 cloves garlic, minced
  • 1 small onion, sliced
  • ¼ cup bell pepper, diced
  • 3 cups broccoli florets
  • ¾ cup water
  • ¼ cup chopped peanuts
  • ¼ cup barbecue sauce
  • 1 Tbsp. peanut butter
  • 1 tsp. chili powder

Directions

  1. Cook spaghetti according to package directions and drain.
  2. While spaghetti cooks, heat a large skillet over medium-high heat. Add oil and sauté garlic, onion, and pepper until golden (3-5 minutes).
  3. Add the water and broccoli, and cook until broccoli is tender (3-5 minutes).
  4. Whisk together chili powder, peanuts, barbecue sauce, and peanut butter. Stir into broccoli. Heat briefly and serve over spaghetti.
