Ingredients
Lemon Dressing:
- 1 Tbsp. olive oil
- 3 Tbsp. lemon juice
- 1 tsp. mint
- 1 tsp. oregano
- ½ tsp. salt
- Pepper to taste
Salad:
- 6 cups romaine lettuce
- 2 chicken breasts, grilled and sliced
- 2 cups cooked lentils
- 1 cup chopped cucumber
- 1 cup chopped tomatoes
- ¼ cup thinly sliced red onion
Directions
- Whisk together dressing ingredients.
- Toss salad ingredients together with dressing. Serve immediately.
