Mediterranean Chicken Salad

Lemon and olive oil are a classic combination for dressing salad, and they’re a perfect pairing with lentils, which boost the fiber and protein in this easy salad.

Ingredients

  • Lemon Dressing:

    • 1 Tbsp. olive oil
    • 3 Tbsp. lemon juice
    • 1 tsp. mint
    • 1 tsp. oregano
    • ½ tsp. salt
    • Pepper to taste

    Salad:

    • 6 cups romaine lettuce
    • 2 chicken breasts, grilled and sliced
    • 2 cups cooked lentils
    • 1 cup chopped cucumber
    • 1 cup chopped tomatoes
    • ¼ cup thinly sliced red onion

Directions

  1. Whisk together dressing ingredients.
  2. Toss salad ingredients together with dressing. Serve immediately.
