Yellow Squash Skillet Casserole

Quick, easy, nutritious, and darn tasty, this is the perfect casserole for a busy weeknight. If you’re getting produce from a CSA, use this as a template for cooking up just about any veg you’re not sure what to do with.

Ingredients

  • 1 large yellow summer squash, thinly sliced
  • ½ cup shredded carrots
  • ½ cup minced bell pepper
  • ½ tsp. oregano
  • ⅛ tsp. pepper
  • ⅛ tsp. salt
  • 2 Tbsp. chopped fresh parsley
  • ¼ cup shredded reduced-fat sharp cheddar cheese
  • 2 Tbsp. bread crumbs

Directions

  1. Coat a large, ovenproof skillet with cooking spray and heat over medium-high heat. Cook the squash, carrots, bell pepper, oregano, and pepper until the squash is tender (5-6 minutes).
  2. Remove pan from the heat. Sprinkle with the salt, parsley, and cheese. Top with bread crumbs.
  3. Place the oven rack to the highest position and turn broiler to high. Broil until the bread crumbs begin to brown (1 minute). Serve hot.
