Ingredients
- 3 lbs. new potatoes
- 2 cups chicken stock
- 2 onions, quartered
- 2 Tbsp. chopped fresh rosemary
- 3 Tbsp. olive oil
- Pepper to taste
Directions
- Place all ingredients in a large, heavy-bottomed pot, cover, and bring to a simmer over medium-high heat until potatoes are tender (10-15 minutes).
- Remove the lid and continue cooking until liquid cooks down. Smash potatoes slightly and continue to cook until golden brown (3-4 minutes).
