Spinach Dip

Use this mild, herby vegetable dip with any of your favorite veggies, or serve it with pita crisps or Italian bread.

Ingredients

  • Spinach Dip:

    • 10 oz. frozen, chopped spinach, thawed and drained
    • ½ cup mayonnaise
    • 8 oz. plain, low-fat yogurt
    • ¼ cup chopped fresh parsley
    • ¼ cup chopped onion
    • ½ tsp. dill

    Vegetables for Dipping:

    • 1 red bell pepper, cut in strips
    • 2 stalks of celery, cut in 3 inch pieces

Directions

  1. Squeeze the spinach to remove excess liquid. Combine with the remaining ingredients in a medium bowl.
  2. Cover and refrigerate until the flavors have blended (1 hour).
