Roasting makes broccoli and tomatoes a little sweeter. Tossed with bright Mediterranean ingredients just before serving, this bright and flavorful dish is delicious and a cinch.
Ingredients
- 12 oz. broccoli florets
- 1 cup grape tomatoes
- 1 Tbsp. olive oil
- 2 cloves garlic, minced
- ¼ tsp. salt
- ½ tsp. lemon zest
- 1 Tbsp. lemon juice
- 10 black olives, sliced
- 1 tsp. dried oregano
- 2 tsp. capers, rinsed
Directions
- Preheat oven to 450ºF.
- Toss broccoli and tomatoes with oil, garlic, and salt to coat. Spread in an even layer on a baking sheet. Bake until the broccoli begins to brown (15-20 minutes).
- Combine lemon zest, juice, olives, oregano, and capers in a large bowl. Add the roasted vegetables and stir to coat. Serve warm.
