Mediterranean Roasted Broccoli & Tomatoes

Roasting makes broccoli and tomatoes a little sweeter. Tossed with bright Mediterranean ingredients just before serving, this bright and flavorful dish is delicious and a cinch.

Ingredients

  • 12 oz. broccoli florets
  • 1 cup grape tomatoes
  • 1 Tbsp. olive oil
  • 2 cloves garlic, minced
  • ¼ tsp. salt
  • ½ tsp. lemon zest
  • 1 Tbsp. lemon juice
  • 10 black olives, sliced
  • 1 tsp. dried oregano
  • 2 tsp. capers, rinsed

Directions

  1. Preheat oven to 450ºF.
  2. Toss broccoli and tomatoes with oil, garlic, and salt to coat. Spread in an even layer on a baking sheet. Bake until the broccoli begins to brown (15-20 minutes).
  3. Combine lemon zest, juice, olives, oregano, and capers in a large bowl. Add the roasted vegetables and stir to coat. Serve warm.
