Ingredients
- 1¼ lbs. peaches (about 4), halved
- 1 tsp. canola oil
- 2 Tbsp. finely chopped onion
- 1 jalapeño, seeded and chopped
- Zest and juice of 1 lime
- ¼ cup chopped fresh cilantro
- 2 Tbsp. chopped fresh mint
Directions
- Preheat grill to medium. Brush cut sides of peaches with oil. Grill the peaches until softened and browned in spots (3-5 minutes per side). Let cool.
- Cube the peaches and place in a medium bowl. Stir together with onion, jalapeño, lime zest and juice, cilantro and mint.
