Pine nuts are a classic but expensive nut for making pesto. Macadamia nuts step in this version remarkably well. The lightly sweet and mild flavor is a perfect substitution.
Ingredients
- 1 (9 oz.) package fettuccine
- 3 cups fresh basil leaves
- ¼ cup evaporated skim milk
- 3 Tbsp. roasted macadamia nuts
- 3 Tbsp. grated fresh Parmesan cheese
- 2 Tbsp. lemon juice
- ¾ tsp. salt
- ½ tsp. freshly ground black pepper
Directions
- Cook pasta according to package directions, omitting salt and fat.
- While pasta cooks, place basil and remaining ingredients in a food processor; process until smooth.
- Combine basil mixture and pasta in a large bowl, tossing to coat. Serve with a tossed garden salad and a French baguette.
