Shakshuka is a popular dish in the Middle East. Richly spiced tomato sauce is used to poach eggs. The dish is often served with a flatbread such as lavash.
Ingredients
- 2 Tbsp. olive oil
- 1 (16 oz.) bag frozen mixed peppers and onions
- 1 (26 oz.) jar pasta sauce
- 4 cloves garlic, minced
- ½ tsp. smoked paprika
- 1 tsp. cumin
- ½ tsp. oregano
- ½ lb. baby spinach
- 1 (16 oz.) can reduced sodium white beans, drained and rinsed
- 4 eggs
- ½ cup shredded mozzarella
Directions
- Heat olive oil in a large skillet over medium heat. Cook frozen vegetables and garlic until softened (6-8 minutes).
- Stir in pasta sauce and spices. Bring to a simmer over medium heat, stirring occasionally (5-7 minutes).
- Stir in spinach and white beans. Simmer until spinach is wilted (3-5 minutes).
- Crack eggs into the sauce. Cover with a lid and cook until yolks reach the desired texture (5-8 minutes). Top with shredded cheese to serve.
