Ingredients
- 1 (19 oz.) can black beans, rinsed and drained
- 1 small carrot, diced
- 1 avocado, peeled and diced
- 1 clove garlic, chopped
- ⅓ cup lime juice
- 1 cup tomatoes, seeded and diced
- ½ cup bell pepper, diced
- ¼ cup chopped green onions
- 2 Tbsp. chopped fresh cilantro
- 1 tsp. honey
- ¼ tsp. sea salt
- Pepper to taste
Directions
- Place beans, carrots, avocado, garlic, and lime juice in a food processor and pulse until smooth.
- Combine the pureed mixture and remaining ingredients in a medium bowl stirring until well blended. Let sit for 30 minutes to let flavors meld.
