This vegetable-packed bread may have more in common with a frittata than your average bread, but that won’t stop it from making a great alternative for sandwiches.
Ingredients
- 1 large crown of broccoli, chopped
- 1 c. almond flour
- 1 t. favorite herb mix
- Pinch of salt
- 4 eggs
Directions
1. Preheat the oven to 400°F and line a baking tray with parchment paper.
2. Place broccoli in food processor and work to a fine texture. Measure 4 cups into a mixing bowl.
3. Add flour, herbs and salt and pepper. Whisk in the eggs and work into a loose ball.
4. Flatten dough onto the lined baking tray and bake for 23-25 minutes or until slightly golden and firm.
5. Remove from the oven and let cool completely. Turn upside-down to remove the baking paper. Slice to desired size and store in the fridge.
