Taking its inspiration from the classic dressing, this vegan sandwich is packed full of vegetables to make sure your day isn’t short on greens.

Ingredients

  • 2 slices Guiding Star-worthy whole wheat bread
  • 1 small avocado, sliced
  • 1 small cucumber, sliced
  • 2 hearts of palm, sliced lengthwise
  • 6 watercress or arugula leaves
  • 10 cilantro leaves
