Ingredients
- 2 cups oat flour
- 1 tsp. baking soda
- ¼ tsp. salt
- ½ tsp. cardamom
- 1 tsp. ground cinnamon
- ¾ cup sweet potato, mashed
- ½ cup canola oil
- ¾ cup light, unsweetened coconut milk
- ½ ripe banana, mashed
- 2 egg whites
Directions
- Preheat oven to 350º F.
- Stir together dry ingredients. Mix wet ingredients and beat together with dry ingredients.
- Spoon batter onto a cookie sheet. Bake for 20-22 minutes, until cookies are golden brown. Cool on a wire rack.
