The best flavors sometimes come in simple packages. Sweet beets and carrots with high-quality broth combine for a soothing soup.
Ingredients
- 2 tablespoons olive oil
- 1 cup onion, minced
- 4 cups beets, trimmed, peeled, and diced
- 1/2 cup chopped carrots
- 4 cups low-sodium vegetable broth
- 1 cup water
- 1 tablespoon fresh lemon juice
- 1/2 teaspoon salt
- 1 teaspoon freshly ground black pepper
- 4 tablespoon sour cream (optional)
Directions
- Heat the olive oil in a large saucepan over medium-high heat. Add the onion and cook until softened. Add the beets and carrots and cook for 5 minutes. Add the broth, water, lemon juice, salt and pepper.
- Bring to a boil, reduce the heat to medium-low, cover the pan, and simmer until the beets are very tender.
- Remove from the heat and let cool slightly. Using an immersion blender, blend until pureed. Serve warm, garnishing each bowl with sour cream.
