Slow Cooker Plum-Glazed Pork

Sunday dinner was never easier or more delicious with this fruit-drenched, sweet and tangy pork roast. Serve with side of brown rice for a complete meal to bring your family together for a lazy weekend meal.

Ingredients

  • 3 plums, pitted and chopped
  • ½ cup golden raisins
  • 2 tsp. minced fresh ginger
  • 1 small onion, chopped
  • 2 Tbsp. cider vinegar
  • ¼ tsp. cinnamon
  • ¼ tsp. curry powder
  • ½ tsp. salt
  • ½ tsp. pepper
  • 3 lbs. boneless pork loin, fat removed
  • ¾ lb. green beans, trimmed
  • 1 Tbsp. cornstarch
  • 1 Tbsp. water

Directions

  1. In slow cooker, combine plums, raisins, ginger, onion, vinegar, and spices. Mix gently to combine.
  2. Place pork on the mixture and cook on HIGH for 4 hours or on LOW for 6 hours.
  3.  In the last 25 minutes of cooking, add green beans to the slow cooker.
  4. When the green beans are tender, remove pork and green beans from the cooker.
  5. Whisk together cornstarch and water and slowly whisk into the slow cooker. Cook until the sauce thickens (2-3 minutes). Serve pork slices with green beans and drizzled with sauce.
