Lentils and chicken sausage team up to provide a lean and delicious meal that comes together with minimum hassle while you’re handling other little end-of-day tasks.
Ingredients
- 6 shallots, thinly sliced
- 1 Tbsp. olive oil
- 14 oz. fat-free chicken sausages
- ¼ tsp. pepper
- ½ cup dry white wine
- 2 (14.5 oz) cans low-sodium lentils, drained and rinsed
- ¼ cup water
- ¼ tsp. herbes de Provence
Directions
- Preheat oven to 450ºF.
- Heat the oil in a large, oven-safe skillet over medium heat. Stir in shallots and sausages, transfer to oven, and bake until the shallots are soft and caramelized and the sausages blistered, stirring occasionally (30 minutes).
- Remove skillet from the oven and place over high heat. Add the wine and bring to a boil. Scrape brown bits off the bottom of the pan, then add lentils, water, and herbes de Provence. Simmer until the liquid is mostly evaporated (2-3 minutes). Serve hot.
