Made for a school lunch program, this pasta salad will please picky eaters of all ages.
Ingredients
Salad:
- 1 lb. whole wheat pasta, cooked, drained and cooled
- 2 cups baby spinach leaves
- 1 pint cherry or grape tomatoes, halved
- ½ cup low-fat shredded cheese
- 2 Tbsp. bacon bits
Greek Yogurt Ranch Dressing:
- ½ cup lowfat buttermilk
- ¼ cup lowfat plain Greek yogurt
- ½ Tbsp. fresh parsley, chopped
- ½ tsp. fresh chives, chopped
- ½ tsp. lemon juice
- ¼ tsp. salt
- ⅛ tsp. dill
- ⅛ tsp. mustard powder
- ⅛ tsp. garlic powder
- ⅛ tsp. black pepper
- ⅛ tsp. paprika
Directions
- Combine all salad ingredients, except dressing, in a large bowl and stir well to combine. Chill up to 24 hours before serving.
- Mix dressing ingredients thoroughly.
- Toss salad with dressing and mix to coat thoroughly.
